Scrumptious Apple Cake

 

1 cup oil
1 ½ cups sugar
3 eggs
3 cups flour
¼ cup wheat germ
¼ cup oat bran
1 tsp soda
1 ½ tsp salt
½ tsp cinnamon
½ tsp nutmeg
2 tsp vanilla extract
1 tsp almond extract
1 cup buttermilk
1 cup black walnuts (or pecans/English walnuts)
2 cups diced apples
1 very ripe banana (if available)
¼ cup raisins
¼ cup dried sweetened cranberries
2 TBL rum, heated and poured over the raisins & cranberries before you begin mixing the cake.

Use a large mixing bowl. Put in dry ingredients and stir. Add oil, eggs, buttermilk, and flavorings. Mix well w/ electric mixer. Add nuts, apples, and everything else. Stir with a wooden spoon. Taste it. Once I forgot to put in the sugar.

Grease and flour your cake pan or pans. You can use whatever you like. I usually put ½ to ¾ in a bundt pan and the rest in a regular layer cake pan. This is a big cake, so making part of it to freeze is a good idea.

Bake at 350 deg until it tests done. Cool on racks.
