Nana's Spice Cake

1 stick butter
1 ½ cups brown sugar
3 eggs
1 tsp vanilla
1 cup buttermilk
2 cups flour
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
½ tsp nutmeg

 

Cream butter and sugar; add eggs 1 at a time; add vanilla.

Sift dry ingredients together and add alternately w/buttermilk.

Pour into two prepared cake pans.

Bake at 350 about 25 min. Cool on racks. This is an original recipe and the grandchildren’s favorite cake.

 

Frost with whatever you like. I use this chocolate icing:

 

CHOCOLATE ICING:

 

¼ cup cocoa

1 cup sugar

¼ cup cream, half & half, or evaporated milk

½ stick butter (not margarine)

1 tsp vanilla

 

Melt the butter in a medium saucepan. Add cream, sugar and cocoa and mix well. Cook and stir over medium heat until full rolling boil. Boil for one minute without stirring. Remove from heat. Add 1 tsp vanilla. Stir and beat until mixture begins to thicken. Working quickly, spread about half on the bottom layer. Put on the top layer and pour the rest over it. If you’re lucky, the icing will harden about half way down the sides. I’m lucky about half the time, so don’t worry if it’s not perfect. It will still taste great.
