Nana's Sweet Potato Pie


3 medium sweet potatoes. Peel potatoes (use a potato peeler). Cover w/water and boil. Drain as soon as tender, about 30 min.

½ stick butter
1 cup sugar, plus to taste
1 egg, beaten
½ tsp salt
1 tsp vanilla
1 tsp lemon flavoring
1 tsp nutmeg, or to taste
¼ cup milk or cream

Mash potatoes with butter while they are still very hot. Add sugar & stir well. Add egg & stir. Add vanilla, lemon, nutmeg & salt. Mix well, then add milk and taste. Add more sugar & nutmeg if needed. The amount of potato will vary a little with each pie, so you must adjust final amounts to taste.

Pour into prepared pie shell and bake at 375 for about 55 minutes. Pie is done when center is puffed up. Cool on a rack.
